Cookie Cups (yes the instagram ones)

Cookie cups!
we’ve all seen them on instagram but we can’t actually make them in really life right? Surprisingly to me, wrong. All you need is a special tray, some ingredients and a hella lot of time. 

Let’s go!

To make these photogenic beauties you will need :
385g plain flour (3 cups)
145g brown sugar (2/3 cup)
65g granulated sugar (1/3 cup)
1/2tsp salt
3/4tsp baking powder
155g butter (1 1/2 sticks)
2 eggs
1tsp vanilla extract
55g chocolate chips (2/3 cup)

Method :
  1. Preheat the oven to 180C (350F) and spray oil into the cavities of the pan.
  2. Combine all of the dry ingredients including both sugars
  3. Melt the butter in a separate bowl and allow it to cool slightly before adding the eggs and vanilla
  4. Combine the dry and wet ingredients to make a stiff dough. Add a little more flour to improve the consistency if needed
  5. Add the chocolate chips and portion the dough into balls of 2 heaped tablespoons, putting one into each cavity (this mixture should make around 2 dozen)
  6. Use the insert to push the dough down and fill the cavity, assuring you use an even pressure. LEAVE THIS IN PLACE DURING BAKING
  7. Bake for 17-19 minutes then allow them to cool in the pan for 10 minutes before gently removing from the pan. 

This is when the instructions end and survival mode kicked in. So i am going to give you a few pointers just to help. 
Firstly, and i can’t stress this enough, bake one as a trial run. I did this and it went wrong but from this I learnt for the others, and it meant i didn’t ruin 6. Put it with some ice cream and you have a perfect pudding!

Another thing i learnt that the instructions did not state was to never push down the inserts while baking. They will rise along with the cookies and if you push it down, it will just break the cookie. Some of them will move out of shape but that can easily be trimmed. 

When it comes to trimming them, you can do it before and after letting the cookies cool as they are quite soft. I decided to use scissors as a shortcut, however leave some excess which you can sort later. 

Later is now. After trimming the cookies, i put them into the freezer in order to harden them, and you should do this for at least 20 minutes (they have to be SOLID otherwise they break). 
Now here is the game changer. I grated the frozen cookie cups. Yep you heard me right. This creates the PERFECT shaped cup, but you have to make sure it is fully solid as it will start to defrost. 

Coat their insides with chocolate, the way i’m sure everyone’s body looks on December 25th, and you have the perfect cookie cup!
(my personal fave was ice cream because it kind of tasted like ben and jerry’s aka the best)
